VINTAGE NOTES
The 2017 vintage started off with very wet conditions that resulted in robust canopy growth. During summer, the vigorous leaves helped protect clusters from warm, dry weather. We took extra care to
keep the fruit load balanced, with continued diligence in the cellar to help bring out the fruit’s best expression. Grapes were harvested at peak ripeness from mid-September to early October. We took extra care in hand-sorting the fruit and used 100% free-run juice, resulting in wines of intensity and complexity. We are thrilled with the stellar quality of the wine, despite a challenging harvest season.

WINEMAKING NOTES
Grape clusters from our high-elevation vineyards were gravity-fed onto a vibrating table where two screens sifted out materials other than grapes, and we removed by hand any fruit that did not pass
visual inspection. After gentle destemming, individual berries were hand-sorted again to ensure that only the best grapes were delivered to tanks. The fruit underwent five days of cold maceration and up to six weeks of primary fermentation before gentle basket press. We aged the wine in 100% new French oak barrels for 20 months. After careful blending of select lots, the wine was bottled in Spring 2019 for additional bottle age before release.

TASTING NOTES
Our 2017 Napa Valley Merlot is a cellar-worthy wine that will age beautifully for a decade or more. The wine opens with aromas of preserved marasca cherries, rose petal, anise and a touch of soft, supple leather. The well-textured palate brings fruit-forward notes of blackberry, blueberry, raspberry and black cherry that blend seamlessly with spicy, earthy undertones of allspice, sautéed sage, black tea leaf and hints of clove before a lengthy, memorable finish."

"VINTAGE NOTES
After plentiful winter rains, the 2018 growing season began with an early budbreak. Serene springtime weather — warm and sunny throughout — allowed vines to develop at an ideal pace. An optimal fruit set yielded consistent, uniform clusters. Conditions stayed moderate and steady throughout summer and fall, extending the languid season and giving clusters ample ripening time to develop deep, complex structure and flavors. Harvest began slightly late, delivering clean, well-developed fruit into the cellar.

WINEMAKING NOTES
Our Chardonnay was picked from high-elevation vineyards during the cool of the night and each whole cluster was inspected and hand sorted at the winery before being gravity fed into the bladder press. The juice settled in stainless steel tanks for 24 hours. After rigorous
inspection, we racked the finest lots to 100% new French oak barrels and monitored fermentation daily, stirring the lees over the next six months only as needed to stimulate the process. After malolactic fermentation completed, the wine continued to age on lees for a total
of16 months aging. The wine was bottled without fining or filtration.

TASTING NOTES
Blending classic Napa Valley opulence with Burgundian-style restraint, the 2018 Pahlmeyer Napa Valley Chardonnay opens with generous aromas of Meyer lemon curd, citron, toasted brioche and hints of delicate white florals. The palate offers richness up front and on the long finish, with mouth-watering mid-palate acidity and flinty wet stone characteristics giving the wine attractive depth and substantial texture. However, summer brought warm, steady temperatures that allowed grapes to mature and ripen evenly and with striking complexity. A late
harvest yielded exceptional, beautifully balanced fruit.

WINEMAKING NOTES
The grapes were hand-picked from select vineyards in the Napa Valley. After coming into the cellar, the grapes were hand-sorted before gently whole-cluster pressed. After settling overnight, the wine was fermented for about 45 days and then aged entirely in French oak barrels, including 100% malolactic fermentation.

TASTING NOTES
Our Chardonnay opens with notes of fresh-cut pears and orange blossom that permeate the aroma. In the glass, the wine evolves and deepens, adding bright, zesty hints of creamy lemon meringue and tangy lemon curd. On the inviting palate, the wine’s lively acidity is balanced with rich notes of pear, tangerine and baked apricot, wrapped up with a subtle kiss of caramel and vanilla on the playful finish.

VINTAGE NOTES
In 2017, significant rainfall in the spring led into a normal budbreak period in late March with bloom occurring mid-May. The vineyard encountered multiple heat spikes throughout the summer creating a dry environment in which the grapevines matured and developed concentrated flavors.

WINEMAKING NOTES
Grape clusters were hand-picked in the cool of the night, then hand-sorted at the winery. We gently de-stemmed the grapes using only whole, intact berries for fermentation. After extended cold soak, the
grapes entered fermentation for 14 to 19 days, then the free-run wine was drained to French oak barrels where the wine aged for 9 months.

TASTING NOTES
This wine has deep ruby red color in the glass. Aromas of cherry blossom and sweet, dark blueberries lead onto a dense, creamy palate with flavors of ripe black fruit and seductive oak. This is a fruit-driven, hedonistic, approachable Pinot Noir.

Jayson Red Wine is a distinctive blend from some of Napa Valley’s finest vineyards, crafted to express
each vintage with intensity and richness. Grapes for this wine were hand-picked and hand-sorted before
undergoing fermentation in stainless steel tanks to enhance its fresh fruit profile and retain its bright
acidity. The wine was then racked to 35% new French oak barrels for 16 months of aging.


TASTING NOTES
Our Red Wine offers bright, fresh-picked fruit notes, as notes of dark plum, raspberry and black currant
weave playfully with hints of smooth caramel and butterscotch that linger on the finish. Velvety, expansive
and deeply expressive, this is a Merlot-based blend at its fullest potential.

Our mountain-grown Cabernet Sauvignon was harvested at night to deliver naturally cooled grapes to the winery. Whole clusters were gravity-fed onto a vibrating table for hand sorting. Selected clusters were gently de-stemmed, delivering whole berries for a final hand sorting. After several days of cold maceration, the fruit
entered primary fermentation for two to three weeks, then gently pressed in our stainless-steel basket. The wine
finished malolactic fermentation in barrel, then aged for 17 months in 70% new French oak barrels.

TASTING NOTES
Our dark, expressive Napa Valley Cabernet Sauvignon opens with aromas and notes of wild blackberries, anise and Italian Castelvetrano olive. Youthful upon release, the wine’s firm tannins will soften over time, whether in the cellar or while swirling in your decanter or glass. Patience rewards as a plush, juicy mid-palate is revealed, confidently leading to the lengthy finish that hints at blueberry jam and warm vanilla.

VINTAGE NOTES
The 2019 growing season was particularly long for Sauvignon Blanc in the Napa Valley. With a slightly later harvest and longer hang time, the vintage developed a tropical style.

WINEMAKING NOTES
The Sauvignon Blanc grapes were hand-sorted and gently pressed as whole clusters. The wine was fermented and aged in neutral French oak barrels to highlight the beautiful acidity of the fruit, while enhancing its complexity. The vintage was barrel fermented in neutral oak. We extended contact with lees to
impart a rich texture, which is balanced by the bright acidity of the wine.

TASTING NOTES
Aromas of lime verbena and orange blossom and hints of lemongrass radiate from the glass. The acidity matched with the texture create a palate that is crisp, yet long and juicy. On the finish, layers of pineapple and apricot play off a slight hint of green apple acidity. Our 2019 Sauvignon Blanc pairs beautifully with a wedge of
triple creme brie.

VINIFICATION Select grapes are hand harvested. Three weeks maceration is followed by four weeks of fermentation in stainless steel at controlled temperatures. Three months of ageing in bottle before release. No wood ageing.

TASTING NOTE: Ruby red color. Sweet spice, chocolate and red fruit aromas with hints of tobacco. Medium bodied and dry with ripe red fruit, light tannins and well balanced acidity.

FOOD PAIRING A very food friendly wine. A great match for dishes made with tomatoes like pasta and pizza. Also excellent with cured meats and cheeses.
