Highland Park 12YO 700ml Highland & the Islands Single Malt Scotch Whisky Very popular single malt internationally, its key quality is its smokiness. Aromas of herbs and heather, boiled sweets and a drop of full-cream; all rounded off with a waft of smoky sweetness. The water source is the wonderfully named Cattie Maggie's Spring. Peat cut on the local Hobbister Moor heats floor maltings to produce malt with gentle peat reek. The distillery's malt is mixed with unpeated, imported malt, giving gentle smokiness to the end product. The malt is ground and combined with water making wash that is distilled producing spirit. Bottled at 46%, the GlenDronach Revival is non chill filtered and of natural colour. A truly excellent single malt. Appearance: Deep gold with a lovely mahogany heart. Nose: Incredible concentration of aromas. The nose is elegant and evenly presented with fine aromatic notes of savoury dark-red berry fruits harmoniously entwined with dark herbs and notes of earth and game. This has good depth and gentle intensity. Medium-full bodied, the palate has a sweetly rich and gently concentrated heart of dark raspberry fruit with savoury red berry fruits and subtle notes of dried herbs with earth and game nuances. The fruit richness is underlined by light, grainy tannin structure and the wine flows with good acid energy, leading to an elegant, lightly nuanced, lingering finish. This is a gently rich and sweet Cotes du Rhone with dark-red berry fruits and notes of herbs and earth on a light, structured palate. Match with barbecued and roasted red meats over the next 4+ years.
